前言

Monographs and reviews of a particular subject area, although different from peer- reviewed papers reporting original research, provide important secondhand (and thirdhand) information to students and practitioners of a particular subject area or process. This monograph is heavily indebted to the previous original research it summarizes. The French poet, journalist, and novelist Anatole France, upon his award of the Nobel Prize for Literature in 1921, commented: "When a thing has been said and well said, have no scruple: take it and copy it." This quotation has been my byword throughout the development and wilting of this monograph on brewing intensification. Many people have provided me with information on this topic, some unwittingly, and others were pestered for advice and information. Nevertheless, I am grateful to all of them, because without them, this document would never have been completed. As well as the dedication of this book to my wife, I express my thanks to Anne Anstruther, my long-suffering and patient secretary, for her hard work and suggestions during this projects evolution.
